Composting your pumpkins can help the environment and also encourage your plants to grow.
 
Save for Soup Stock
Keep the stringy insides. They work brilliantly added to soup or homemade veggie burgers. It will freeze like a dream so you can pop them in a bag in the freezer to keep them fresh until you need them.
 
Make Pumpkin Hummus
If you sauté pumpkin pulp with oil and purée with canned chickpeas you will have a creamy pumpkin hummus.
 
Purée the Pulp
You can also try puréeing the pulp to add to rice or risotto for added flavour.
